One of my favorite cookies. Every piece of this cookie works. The Graham cracker cookie is amazing, and the cheesecake frosting is the right level of sweet and the lemon curd is the perfect topper. This one needs a good layer of lemon curd. I tried this a couple of times and one cookie had more lemon than the other  and it was better than the one with less.
